Holiday Gingerbread Cake


I absolutely LOVE the holiday season! Christmas is one of my favorite holidays. This year I’ve decided to share my Holiday Gingerbread Cake recipe with all of you. It’s one of my favorite cakes to make for Christmas. I usually let the kids have fun by decorating the Gingerbread cookies to go on top of the cake as well as piling on the powdered sugar “snow”. I hope all of you have just as much fun as we do creating this cake. Happy Holidays!!

Ingredients:

3 cups flour

2 tsp ground ginger

2tsp cinnamon sugar

¼ tsp nutmeg

½ tsp cloves

4 tsp vanilla (Pure vanilla extract)

1 tsp salt

1 tsp baking powder

1 tsp baking soda

1 cup softened unsalted butter

1 cup brown sugar

1 ½ cup sugar

3tbsp molasses

1 tsp honey

3 large eggs

1 ¼ cup milk

Buttercream:

1 cup unsalted butter

4 cups powdered sugar

8oz cream cheese

1tsp vanilla

1tsp cinnamon sugar

  1. Grease and lightly flour two 9 inch round cake pans

  2. Mix together the flour, spices, baking powder and baking soda

  3. In a large bowl or standing mixer, beat the butter until smooth, add sugar to the butter and beat until light and fluffy.

  4. Add the honey, molasses, vanilla and eggs.

  5. Add your flour and milk(alternating between the two)

  6. Fill your cake pans and bake at 350 degrees for 30 minutes or until inserted toothpick comes out clean.

For the buttercream:

  1. Beat your softened butter and cream cheese until smooth

  2. Add 1 cup powdered sugar at a time

  3. Add vanilla and cinnamon

  4. Add milk tbsp at a time until desired consistency.

Powdered sugar snow:

1 cup powdered sugar

½ cup coconut flakes
